It has been extremely cold with the early arrival of winter. The whole UK has been covered with snow! In London, white flakes finally arrived just 2 days ago. Basically, Europe hit by blanket of snow and sub-zero conditions. Well, I like snow. It makes me happy when I see the flakes falling down from the sky. After a while, it makes everything looks very very pretty. Maybe because I come from Malaysia and I haven’t seen snow until I moved to Europe. I am just like a kid, enjoy walking in the snow, it puts a smile on my face. However, snow does bring a lot of traffic disruptions, which I am glad that I will never be affected as I rely on my feet to bring me to places most of the time.
It has never been so cold during the end of November/early of December. My diet has started to change. I make a lot of soupy dishes to keep warm and to make sure that I consume enough of liquid. Meatballs in roast tomato sauce is definitely a winner! I have been using my ‘reserved’ frozen meatballs and it really has come in handy to make dinner.
Recipes like Butternut Squash Soup, French Onion Soup, and Potato, Leeks & Carrots will also be good options for freezing weather. If you want a bit of spice, then, why not Tom Yum Goong? I am sure it will make you sweat! For me, I had Assam Laksa to keep me warm 2 weeks ago I think. Well, I didn’t make it from scratch though as I was too lazy. So, I used my ‘reserved’ instant paste that Gertrude from My Kitchen Snippets sent to me a while ago. It was good! Thanks, Gert! It really has come in handy for me during this sub-zero weather!
Well, I kind of have some left overs of stuff that I thought I wanted to finish before I place order for my weekly shopping. So, I made a traditional English dish called Bubble and Squeak. Bubble and Squeak is a dish that is made with leftover vegetables from a roast dinner. The ingredients usually are potato and cabbage. However, other vegetables can also be added. When I discovered this dish, I couldn’t make sense of the name. I finally found out that it is called Bubble and Squeak because when you pan fry it, it makes bubbling and squeaking sounds!
Oh yeah, I forget to mention that Bubble and Squeak is usually made and served on Boxing Day. So, this is a great recipe for this year’s Christmas if you have a lot of leftovers! 🙂
