I believe in healthy eating on a daily basis – less salt intake, use olive oil, less sugar intake, avoid deep-frying food possible.. etc. Thus, a bowl of vegs and fruits brings more good than harm and it doesn’t take a lot of time to prepare.
There are times where I want to have my food quick yet it has be to good. Salad always come to my mind. It’s always good to start a meal with a bowl of salad, which is said to rev up one’s appetite. I love salads – all sorts. Not only they fill me up but it makes me feel less guilty sometimes when I think I have eaten too much.
Combination of flavours is very important in making salad. Thus, I thought Melon, Tomatoes, Mozzarella & Lettuce Salad would be great choice of combination. Melon, Tomatoes, Mozzarella & Lettuce Salad salad took probably less than 15 minutes to prepare.

Ingredients:
For the Melon, Tomatoes, Mozzarella & Lettuce Salad:
150ml lettuce
10 cherry tomatoes, halved
10 small buffalo mozzarella
10 Melon/cantaloupe balls
For the Dressing:
2 tbsp walnut oil
1 tsp balsamic vinegar
1 tsp dried mixed herbs
salt and pepper
Method:
Put the dressing ingredients in a jar with a tight lid on and shake to mix. Divide equal portion of lettuce, cherry tomatoes, buffalo mozzarella and melon balls on individual plate and drizzle the dressing over. Serve at room temperature.
