Ingredients:
For the Guinness Honeycomb Ice Cream:
6 egg yolks
125g light muscovado sugar
300ml single cream
150ml draught Guinness
2 x 40g chocolate-covered honeycomb bars, chopped
Method:
1. Put the egg yolks and sugar in a large heatproof bowl set over a saucepan of simmering water, making sure that the base of the bowl doesn’t touch the water. Stir until the sugar has dissolved, then remove from the heat.
2. Heat the cream and Guinness in a nonstick saucepan to just below boiling point – don’t worry if the mixture looks slightly curdled at this point. Pour over the egg yolk and sugar mixture, beating well with a balloon whisk.
3. Return the mixture to the nonstick pan and cook over the lowest possible heat, stirring constantly, until the custard starts to thicken and coats the back of the spoon. This will take at least 10 minutes and up to 20 minutes.
4. Pour the mixture back into the heatproof bowl and leave to cool completely, then stir in the chopped chocolate-covered honeycomb bars. Turn the ice cream into a shallow plastic container and freeze for 2 hours, then remove it from the freezer and stir well. Return to the freezer until completely frozen.
5. Remove the ice cream from the freezer and leave at room temperature for a few minutes to soften slightly before serving.
I made some guinness pie over the weekend, this out of the world dessert would have been perfect to finish off my meal! I am trying to imagine the taste!

Oh wow I never would've thought of this combination of flavors and textures. Sounds and looks fabulous. If you don't mind me asking, do you set your exposure manually for photos? I like photos with darker moodier lighting like this one, but still have a lot to learn about how to work my camera. Thanks!

I don't drink beer because I don't like the bitter taste… but mixed with cream and muscovado sugar, plus the honeycomb chocolate bars… You piqued my interest 🙂

Am not a huge fan of beer, but actually bought two bottles of Guinness for St Patricks Day. Still haven't decided what to make with it yet (gonna use them this weekend), this looks like a great idea! Especially now that it's getting warmer 🙂

It's new to me! Can't really imagine the taste now but I'm sure it will be the kinda sweet and bitter ice-cream I like….yummy! We have Guinness crab and Guinness spare ribs served in the local Chinese restaurants. Have you tried them before?
