Apple Compote

When it comes to desserts, simplicity is key for me. No need for complicated recipes or fancy techniques – just delicious, easy-to-make treats that hit the spot every time. One of my absolute favourites? Apple Compote. It's the kind of dessert anyone can whip up at home, no fuss, no stress.

Apples are such a versatile fruit, and they shine brilliantly in this humble yet delightful dessert. My other half hails from Normandy, France, a region famed not only for its dairy products but also for its love affair with apples. From apple tarts to apple brandy, Normandy knows how to make the most of this fruit. One of the region’s most famous exports is Calvados, a rich, aromatic apple brandy. Whether served as an apéritif, mixed into cocktails, enjoyed between meals as a digestif, or paired with coffee, Calvados also finds its way into cooking and baking, adding a depth of flavour that's simply divine.

In every French home, apple compote is a beloved staple. It’s a simple, comforting dessert that’s enjoyed by all ages, from the little ones to the grandparents. I love making a big batch of apple compote – it keeps beautifully in the fridge for a few days and actually tastes even better the next day.

Prep Time: 20 minutes

Cook Time: 30 minutes

Yield: 4-6 persons

Ingredients:

1kg cooking apples

1 cinnamon stick

150ml water

60g caster sugar

1 packet vanilla sugar

some toasted almonds, to serve

some raisins, to serve

Method:

1. Peel the apples. Remove the cores, seeds and cut into cubes. Place the cut apples in a saucepan with cinnamon stick, water, sugar and vanilla sugar.

2. Cook out the over low heat for 20 – 25 minutes to a compote, stirring from time to time. If the texture is too runny then leave to reduce until you have a thick texture.

3. Serve chilled and sprinkled with toasted almonds and some raisins if liked.
