
I love using citrus fruits in marinates. Also to use them in preparing salads. Today, I am gonna share this simple and delicious recipe. It’s Baked Cod with Orange & Lime. You can substitute cod with other white fish, like Haddock. I cooked some pasta (Tagliatelle) to go with this dish with some toasted pine nuts to make the dish more interesting.
To make this dish, you don’t need a lot of ingredients. All you need are the following to make a meal for 2.

I tend to steam or pan-sear my fish…I’ve forgotten how nice baked fish can be. Thanks for reminding me of that – and I love the addition of pine nuts. I will have to try this dish one of these days, though I still want to try your steamed fish recipe also. decisions…

I tried the other day, we all like it especially the caramelised red onions and the intense flavour of the citrus fish. I am surprised at how simple and plain this dish was but yet it tasted so so good.
I am assuming your instruction 3 is for cooking the red onions?

The dish was delightful. The red onion I used was likely too big and tended to dominate. Will reduce the next time. Overall citrus flavor of the dish was very nice. May try a dill sauce for the pasta next time.
Great to hear that! Yes, red onion could be quite dominating, perhaps use smaller one or you could substitute it with white onion.
