Mom’s Easy Fried Chicken

I’m back! I feel like it has been a long time since I last posted. Oh, you must be thinking how was the wedding? It went really well and thank God it didn’t rain on that day! It was actually drizzling a bit before the wedding ceremony started and that was it! So, the whole event took place on the beach. I am glad that it went as planned! And now it’s just a waiting game – to lay my eyes on the photos taken on that special day of my life. I was told it might not be ready until some time in June. So, I’ve gotta to be patient!

The first leg of the trip was in KL. We were pretty busy going to places and did a few things for the wedding. I was so looking forward to meetΒ Sherie, but due to last minute change, we didn’t meet up. πŸ™ Well, don’t worry Sherie, we will do it next time! πŸ˜‰

We spent a few days in my hometown and we were so spoilt – eating delicious food and enjoyed the company of my family. We didn’t spend a lot of days due to the fact that we had to be in Langkawi a few days in advance to prepare for our wedding – yes, we were really stressed and had meetings with all the people involved before the actual day!

So, it was pretty hectic and I didn’t feel that I was on vacation at all! However, the warm weather really made me feel great! The actual day of the wedding went pass so quickly that I didn’t even have time to recap what I did and how the whole event went! I guess, the only way to refresh my memory is to look at the wedding photos.

We flew to Bali after the wedding. It was great to visit Bali again and I will write about my trip soon, with all the photos that I took! And yes, I met up with Ira when I was there – so glad to meet you Ira and thanks for spending time with me! πŸ™‚ Hope to see you again soon!

Now that I am back in London, the weather has been pretty sunny and warm, except the day when we landed. I am still a bit jet-lagged but that doesn’t really matter. What matters most is that I miss the time when my family members were around, we chatted and laughed and spoilt with good food!

It’s not a surprise for me to miss my mom’s cooking. So, to be able to savour the flavours that mom puts together, I decided to make one of my all time favourites – Mom’s Easy Fried Chicken.

When I was young, I would rush to the kitchen and stood next to my mom when she fried the chicken – not so much of giving her a helping hand, but more to help eating the crispy pieces of chicken as soon as they were drained from the hot oil! Though it did slightly burn my lips but I just couldn’t help it. Yes, that’s me and my food – can’t even wait for a few more seconds!

This version of fried chicken is what I ate when growing up – it’s really good, you just have to be patient while the chicken pieces soak up all the goodness of the marinate. I reckon better than KFC! πŸ˜‰

Mom's Easy Fried Chicken

Yield:

Ingredients:

1 x 1.2kg whole chicken, cut into bite-sized
500ml sunflower oil

Marinate:
1 egg
2 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp chili powder
1 tbsp oyster sauce
1 tbsp fish sauce
1/2 tbsp soya sauce
1/2 tbsp sugar
1 tbsp rice wine
2 tbsp custard powder
2 tbsp corn flour
2 tbsp rice flour

Method:

1. Put the cut chicken pieces in a mixing bowl. In a separate large bowl, add in all the marinate ingredients, stir to mix well. Then add the chicken pieces in the marinate, mix and make sure all are well coated. Cover with cling film and put in the fridge for at least 3 hours.

2. Remove the chicken from the fridge and leave to stand at room temperature for about 30 minutes before deep-frying. In a heavy-based saucepan or using wok, heat the sunflower oil until a small piece of bread turns brown in 15 seconds. Fry the chicken in batches for 10-15 minutes, or until the meat is cooked through and the skin is crispy. Don’t overcrowd the pan or wok as this will lover the temperature of the oil.

3. Remove the chicken with kitchen tongs and drain on kitchen paper or a wire cooking rack. Make sure the oil is still hot and continue with the remaining chicken. Serve warm.
